I was cruising around blogland this morning and I saw a delicious lemon zucchini loaf on Em's blog. Since I have a lot of zucchinis in my garden right now, I decided to bake one.
I got all of my ingredients together. And I was off!

The lemon loaf never made it to the photo shoot. So much was eaten that it looked a mess. But it was truly delicious! I had more zucchinis, so I baked another loaf - a pineapple zucchini loaf.
This one I am going to put into the freezer and save it for the weekend.

Oh, yum! I love baking with zucchini! I'll have to try this recipe, for sure. Now, where did my bunds pan go to live? Hmmmm. Hey, I've never seen yellow zucchini before! XO
