Day Lilies, a Flimsy and a Zucchini Recipe

Several people asked me for the Zucchini Pineapple Loaf recipe.  So I will add it to the bottome of this post.  But first I want to show you my scrappy flimsy.  I started this a couple of years ago, but put it away when my machine started to give me problems.  I sewed a couple more rows and now I think I have had enough of this one.  I am calling it finished.


This quilt top reminds me of the Day Lilies I have blooming in my garden at the moment.  I love these.


This is a gorgeous peach coloured one.

Now for the Pineapple Zucchini Loaf recipe.  This is from a "Company's Coming" book by Jean Pare called "Muffins and More".  It is my favourite book by her.

Zucchini Pineapple Loaf

2               eggs
1/2 cup     cooking oil
1 cup        sugar
1 cup        unpeeled, shredded zucchini
1/2 cup     crushed pineapple, drained
1 tsp         vanilla

2 cups       all purpose flour
1 tsp          baking soda
1/2 tsp       baking powder
1/2 tsp       salt
3/4 tsp       cinnamon
1/4 tsp       nutmeg
1/2 cup      chopped nuts  (I have used 1 cup raisins instead of nuts and it turned out great)

Method

Beat eggs, oil and sugar.  Sir in zucchini, pineapple and vanilla.

Measure remaining ingredients in another bowl.  Stir.

Pour all at once into batter.  Stir to moisten.  Pour into greased loaf pan 9x5x3 inches.  I use a bunt pan sprayed with PAM.  Bake in a 350 degree F oven for about 1 hour.  Test to see if it is done.  A toothpick will come out clean.  Cool for 10 minutes.  Turn loaf out to cool on a rack. This is delicious if cut into slices and spread with butter.  Yield 1 loaf.

What's For Dinner?

Day 21 of Blogtoberfest.

Sundays are usually busy around here.  Today was no exception.  No sewing got done.  But I did manage to go to the aquarium store and buy some more tropical fish - some algae eaters, four Angelfish, two New Guinea Rainbows, and two others that I can't remember the name of.  That should please Mimi.  And speaking of food...

I made ratatouille for the first time this afternoon.  This stuff is delicious!  Don't know why I never made it before. 

The tomatoes were from my garden - the last ones.  Everything has died out there after the few nights of frost that we had.  The plants have been removed and the soil dug over.  Now all I can do is look forward to next year.

Tea and Apple Cake Anyone?

This is the last of the apple cake! Sorry! Only enough for one! But here is the recipe, so you can make your own. I call it Mrs. G's (that's me) Apple Cake because I have been making it and changing the recipe for so many years that I don't even remember what the original one called for.
Mrs G's Apple Cake

1 1/4 cups sifted all purpose flour
1/2 tsp salt
1 tsp baking powder
1 tsp sugar
1/2 cup butter or margarine
1 egg
2 tbsp milk
Apples
Raisins, dried currants or dried cranberries (about a handful)
Cinnamon topping (below)

Mix dry ingredients together. Cut in the butter or margarine. Add the egg and milk.
(The mixture will be quite stiff)
Press the dough with your fingers into a 9-inch cake pan
Cover with apples slices that have been peeled, cored and sliced.
Sprinkle with some raisins, dried currants or dried cranberries
Cover with the cinnamon crumble mixture.


Cinnamon Crumble Topping
Mix together:
3/4 cup sugar
1 1/2 tbsp flour
2 tbsp butter
1/2 tsp cinnamon
Bake in a preheated oven at 350F for about 45 minutes.
